WIDWD: Caramba Carabella!

What I Drank With Dinner (WIDWD) A couple of weeks back, Kari prepared a wonderful dish of slow cooked chicken thighs in chipotle sauce, which were served with steaming tortillas along with fresh tomatoes, avocado, and cilantro. I decided to pair the meal with a Carabella 2005 Pinot Noir (14.2%), a bottle we had enjoyed very much while dining at Tilth restaurant. Review: Tilth Restaurant

Last week, my wife and I went to Tilth Restaurant for dinner, where we enjoyed a fantastic food and wine experience. Tilth is unique not only for its focus on local, organic foods, but also for being one of only two restaurants in the country to receive the Oregon Tilth organic certification. The restaurant was started by chef Maria Hines, who had established quite a strong reputation at Earth and Ocean restaurant.
